Spend one night at the south rim of the Grand Canyon, about 4 1/2 - 5 hour drive each way. You'll pass by Hoover Dam on the way, you can schedule your stop at the dam either going or returning.
While at the GC maybe do a flight seeing trip or at least use the free shuttle system to visit the various overlooks. Most scenic at sunset and sunrise.
Here's the site for lodging inside the park (which is the best place to stay): http://www.grandcanyonlodges.com/

When are you going? If it is not summer, for a long day trip, take the 2+ beautiful drive to Death Valley. I like to go north on 95 to Beatty then head west with a quick stop at Rhyolite, a ghost town from gold mining days, stop at the potty at the top of the ridge and look down at the valley then head south when you get to the bottom.
Do visit Valley of Fire, and if you head north on 15 then east to VoF you can go through, visit the petroglyphs at atl atl rock, the CCC cabins, take a hike up to Mouse's tank and check out the petroglyphs there then continue east and drive along Lake Meade back to Vegas. Bring lots of water, snacks and lunch for both VoF and DV.
I like the views from the South Rim of GC better than the north and if you will be there between mid October and mid May the North rim will probably not be open. I would make the trip there and spend one night even if you have a package that has a paid room in a hotel. The west rim/sky walk is generally thought to be a rip off by folks here.
If you can take a really long day trip, head up to Zion, 3 hours each way, but beautiful and IMO worth the effort for folks who won't be in the area again soon.

The south (rim of GC) is better than views on the north?
Great views from both places, north has many fewer visitors and is more peaceful, but there is more variety of views and things to do at the south rim, though crowded in the main visitor area.
I suggested south because 1) you'll drive by Hoover Dam on the way to south rim, so it's a two-for-one deal, though Hoover is close enough to Vegas that you can do it separately; 2) you can drive to the south rim year-round (except for a few heavy snow days when the roads might be closed) but north is closed from Oct - late May and you didn't say when you were going; 3) much easier to get a hotel room on the south rim since there is only one hotel on the north and it fills quickly, while there are 7 lodges at the south rim and maybe a dozen more hotels at Tusayan just a short distance from the park entrance; 4) not positive on this (easy enough to verify) but south is probably a shorter drive.
On the other hand if you want to see two other beautiful parks, Zion and Bryce Canyon, then it would be easy to put together a 2 night trip to North Rim that includes all three parks ...

If your not into gaming, then why not spend just a day or two in Vegas and the rest at the Grand Canyon, Zion, Bryce, or Death Valley.
What month is the trip. The North Rim and Bryce facilities aren't open year round. I don't know that I would go to Death Valley in the summer.

While in Las Vegas, you can bring the entire family to shoot a machine gun at Machine Guns Vegas. Full auto rifles are hard to come by in other states so try some while you're in Nevada. They provide instructors with any rental and pretty good prices. There are also indoor skydiving, go karting, and roller coasters you can try in Vegas that are non-gambling activities. The is also the Red Rock Canyon and Valley of Fire ( only a 45 minute- 1 hour drive away from the Las Vegas Strip) if you want other nature destinations aside from Hoover Dam and Grand Canyon.
