Help w West Coast Trip!

Hi! I wanted to get some thoughts on a West Coast trip with my wife. We're planning to go during the first 10-14 days of July. We both like the outdoors, moderate hiking, enjoy places with a lot of character and are both foodies. Our budget is moderate/above moderate. We've been talking about New Mexico (she really wants to check out Santa Fe and Taos) and Utah (Bryce and Zion) and haven't decided on a third state (we'd be open to Colorado or Nevada). We'd like to avoid places that are extremely hot.
Is it too late to start planning this trip (since we don't have hotels / itinerary)? Could you please recommend an itinerary for this trip (e.g., where we should fly in and out of, must see destinations, advice for hotels, etc.)?
