We are planning a week long trip in february/March and don't know which island to visit. I've been to Maui and Oahu and like the sound of Kauai. Is it more "tropical" than the other islands? we're looking for an undeveloped place with beautiful beaches.

Kauai is fantastic. Be sure to take a helicopter ride along the Na'Pali Coast. Wiamea (sp?) Canyon is gorgeous.
We stayed at Poipu Beach, but not sure of the condition of it since their big storm a year or so ago.It was really nice when we stayed there.
We have visited 4 of the islands and Kauai is a favorite.
Just make sure to take one of the helicopters that don't crash into the Iao Needle.
Tim, Kauai! And Polihale in particular. Worth the drive out to the end of the island thru 2-3 miles of washboard-like canefield.
Some bathrooms/picnic areas but pretty remote and the sunset is worth it.
Then you can stop and have a pizza at Brick Oven Pizza on the way back to "developed".
Have you considered Molokai? I haven't been there in about 4-5 years but the 3-4 times we've been there, there were miles of vacant white, sandy beaches w/ views of Oahu, Lanai and Maui. Molokai was also described as "Hawaii in the 40s"..not much nightlife, if any at all...very relaxing. We stayed at the Kaluakoi. Good golf course, too.
There was also a very undeveloped area at the end of the eastern road with a beach area straight out of Gilligan's Island. You can then hike back to a gorgeous w'fall/pool!
The cliffs around Kaluapapa rival the Napali coast.
