Yes, your GPS will work anywhere on Earth, provided you have no obstructions to the satellites.
That said, if your GPS has maps of Kauai, it will show the roads, otherwise it will just provide the latitude and longitude.

"work" is a relative term. Yes, the receiver will pick up signals from satellites. That will tell where you are. If it doesn't have Hawaii maps loaded then it doesn't matter if it picks up 10 satellites, it won't "work" as I suspect you desire - to tell you how to get where you want to go.

Sorry to be the voice of dissent ... but before I knew Kauai well, it helped me to have my GPS. I didn't have to think about how to get to Waimea Canyon; Hamura's Saimin; Roy's; the address for the orchid store; or which street to turn on the first time I was looking for my condo.
My GPS came loaded with maps for the U.S. -- and that includes Hawaii. FYI, if your GPS is similar to my Garvin, you can buy an SD card from the manufacturer (or on ebay) for whatever country or territory you need. I bought one for Ireland, N. Ireland, and the U.K. and it was fantastic.
But all that said ... you don't really "need" a GPS for Kauai.
