First-time New Orleans visitors -- which tours, restaurants, etc?

We will be in New Orleans for three days during the last week of May. It's my husband, myself, and our 15-year-old boy/girl twins. We're thinking of doing a tour with Tours by Isabelle. The tour covers quite a bit of the city, including Katrina damage and a walk through a cemetery. Also, we'd like to do a swamp tour. Maybe Cajun Encounters or Honey Island? Your thoughts on any of these?

Also, thinking of spending time at the WWII museum. Not sure what else, so any advice would be welcome. Restaurant recommendations would be great too.
