European couple on California car round trip - what to do in March/April?

After a great experience with this forum and you people in the last 3 days I decided to ask you about a few more recommendations for our first trip to North America.
We are European couple in later thirties and wish to explore California + Las Vegas + Grand Canyon at the very beginning of April. We will arrive to Los Angeles and have 2 first weeks in April to do our holiday. We will hire a car at LAX and stay at Orange/Anaheim for the first two nights. Next we will probably travel to Grand Canyon and stay there in a tent for 1 night. We wish to do a small airplane or helicopter flight over the canyon. Next day go to Las Vegas for two nights. Then bite the bullet and do 10 hour drive San Francisco. A few people recommended already that there is nothing to see along the journey and Yosemite is closed in winter. We plan to stay in SF for two nights as well. Then we have 2 days to play with to visit Sacramento or/and Monterey. As a huge motoring fan I wish to see Laguna Seca or a car/motorcycle museum. Miss would like to see a sequoia forest instead. On the way back to Los Angeles we will follow the western coastal route. Have no idea where to stop there and what to see on the way from SF to LA. Ideally we would like to spend a couple of days in Santa Barbara region and enjoy some beach relax but it will not be warm enough I was told. I estimated to do 2000 miles of driving within 2 weeks in a hired car. We’ll have some camping equipment with us and like hotels or B&B for a very reasonable prices (up to $80 per room all inc.). We can’t afford to spend a fortune on this holiday but would like to get maximum out of it. My very first trip to North America. Any ideas or recommendations for any part of our trip will be very welcome. Many thanks in advance. :-)
