There's not a whole lot except farm and ranch land.
You might want to stop in the town of Salado, TX (www.salado.com) - it's a small "artist" village with some 60 shops and galleries selling fine arts, antiques, pottery, and crafts.
There's an Retail Outlet Center in Hillsboro, TX.
Waco has a few museums, a zoo and a couple of parks (www.wacocvb.com/waco-attractions.asp).
Not much else, though.
FYI - You'll probably be taking I-35W from Austin to Fort Worth and won't pass through Waxahachie as mentioned by Momddtravel2. To do that you have to take I-35E just north of Hillsboro toward Dallas - not the best routing if you are going to Fort Worth.

Many of the outlet stores in Hillsboro are closed--not what it once was when it was the only outlet for a long way.
Texas Ranger Museum in Waco. Never been but it sounds interesting.
I'd save your time for Ft Worth.
