I believe Grand Canyon is about a 5-hour drive from Vegas. Preferably, you would want to stay overnight there to enjoy the sites / see the sunset or sunrise.
Death Valley National Park, CA, is about 3 hours away.
Another option that is not too far (& even more beautiful IMHO) is ZION national park in southern Utah.
You can check out all the national parks & travel directions, info on each at the nat'l parks website: www.nps.gov/parks

If my memory serves me well here:
The Grand Canyon is a little too far to make a day trip out of.
It is 5 hours to Las Angeles from Las Vegas, if there were no other cars on the highway.
Mapquest.com will give you an idea of distances.
From Vegas for the day, I would recommend:
Red Rock Canyon
Valley of Fire
Lake Mead/Hoover Dam
Mt Charleston
