Cross country back roads from Ortonville MN to Las Cruces NM

The current route suggested by Google takes me via US 81 and US 30 through Nebraska, US 83 thrugh Kansas, US 54 and some odd New Mexico highways to get the rest of the way. I want to take my time and plan on driving no more than 300-400 miles a day. Right now thinking of stopping at Grand Island, NE, Garden City, KS and Santa Rosa NM. Any other suggestions? Good low budget hotels? Should I push for more miles a day? (I am the only driver). Good roadside stops to see an attraction or take a walk or just get out and stretch? Great places to eat? Alternate route suggestions?

This is a big adventure for me and I want to make the most of it. Thanks so much.
