Cool Weather in August
We're looking for a place to go in August to escape the Texas heat. We've been to the San Diego area many times, both La Jolla and Coronado, but are looking for other ideas. We need something to do in the daytime & nice restaurants, along with beach or water would be nice, but not mandatory.

Anywhere up and down the Pacific coast north of LA would fit your needs. Santa Barbara is gorgeous, San Francisco is great. Portland Oregon is lovely, and Seattle is just wonderful. All cooler than Texas.
Hey, thinking of Seattle, I thought of Vancouver, then my mind wandered to the rest of Canada. How about a trip to Montréal? The weather in August is great, the Jardins Botaniques will have roses in bloom, it's a fantastic city...!

How about the redwood groves along the coast of Humboldt County, California? Cool and shady, mist in the mornings and evenings - sounds like just the relief you're looking for.
Don't even think about the California wine country in August and September. It may not be hot and humid, but it's hot and tinder-dry!

If distance is not a factor, I'd recommend the "north shore" of Minnesota. Duluth is a fun city, and the drive north from there along Lake Superior is spectacular. You'll almost always have a nice cool breeze off of the lake. There are several historical sites and towns along the way, along with many different waterfalls & rivers. Most are within day-tripping distance of Duluth, if you wanted to make that your home base.

Well, Oregon, Washington, and British Columbia aren't California.
Whistler in BC comes to mind - all sorts of activities.
How about an Alaska cruise? Quite affordable this year.
Or the Canadian Rockies - Banff and Jasper NPs will be nice - maybe some crowds around the main attractions, but plenty of room to roam, good restaurants in Banff, plenty of variety.

Michigan? My DH is from Northern MI and we love going up there in the summer. The weather is fantastic. Check out Petoskey /Harbor Springs and surrounding areas. Petoskey is right on Lake Michigan and the views are great. It's quaint, nice dining, golf, shopping etc. You could even make a day trip up to Mackinac.
