One week on the Cape isn't long enough if you are a beach person, and going in the summertime. Its probably too long in the offseason. You don't say when you will be there, or where but here are a couple of other non-beach suggestions:
go biking on the trails at Cape Cod national seashore.
take a whale watch cruise from either Hyannis or Provincetown.
Wander around the shops in Provincetown, its a very nice area.
Go to the Cape Cod potato chip factory, or the Sandwich Glass museum.
