My aunt is visiting from Nice and I would love to take her to a show in the city (manhattan). Besides Stomp and Blue Man Group any suggestions? She loves dancing and I thought I saw a Tango - off broadway show but I haven't seen it advertised recently.

I suggest Jersey Boys. It's a really fun show with lots of great music that she'll probably enjoy even if she can't understand the lyrics.

I haven't seen it yet, but I've also heard that 'Burn the Floor' is fantastic.

West Side Story - I'm sure she's old enough to know the plot and the score

Another idea regarding _West Side Story_. Check to see if you can rent or buy the DVD with the possibility of French sub-titles or dubbing, then have her watch the DVD in French a few days before she goes to the play. She'll learn the plot and lyrics, and can then enjoy both at the show.
If you do take this idea, I'd be interested on how the phrase, "Gee, Officer Krupke: Krup you!!", is translated.
