If you want to see a particular show and guaranteed seating, book in advance. There is a Discount Ticket operation with a couple of booths on the Strip, but they don't always have tickets to all shows or the best seats. Also, sometimes you can get a better deal on the day of the show at thge box office.
My favorite steakhouse is Emril's Delmonico.

There are so many discounts available ahead of time, it's best to buy them for shows you really want to see for better planning and better seats.
Do a search on the TripAdvisor Las Vegas forums. Plenty of tips for discounts and choosing seats (front row not necessarily desirable). Note that most shows are not nightly, so it's best to check performance schedules before you start buying tickets. Also, check websites for what's on (Gold Star is a good place to start) during your visit, so you're not all booked up but overlooked something you'd really like to see.
When attending a show, if you plan on a nice dinner, it's best to do that within a very reasonable walk of the show venue. Haven't checked recently, but earlier this year there were some bargain prix fixe menus at many of the better restaurants, most for early dinners.

Anyway - I agree if there is a special show/time - book it - if not wait till you are there.

Thanks for all the advice. This is our first time and we only have about 3 full days and 3 nights so although I know we can't see everything we want to hit the hightlights.
I agree if there is something you have in mind book it now. www.smartervegas.com for discounts on certain shows. I really loved "O" and thought it was worth the money. I wouldn't recommend booking more than one show in advance though, you may find other things you would rather do and you don't want to be tied down. Have a great trip!
Thanksgiving week is a busy time in Vegas. Your stay is ahead of the peak crowd. However, if you've got a must see show, I would book early and keep a second night for discounted tickets if available.
The discount ticket service on the strip has a web site that indicates when tickets become available for shows. You might watch a few days in advance to see what shows are offered.
