NOLA's. One of the best meals and best service I have EVER had!!! Also loved the shrimp jambalaya at the dive - Mother's (AND their bread pudding - best ever).

My most recent great dining experience in NO was last November at Bella Luna. It has great views of the river and the Crescent City COnnection. Book before you travel to make a reservation and request a table with a view. The best tables are either a in row directly in front of the windows, or if you want something cozier with a slightly obsctructed view, request one of the semi-circular booths that face the windows.
I also like Mr. B's Bistro, Muriel's, the upstairs dining at Arnaud's, and one other place with a female moniker whose name eludes me. Can't think of it at the moment.
