Will this work? We have our plane reservations but no hotel reservations yet so this can change.
Day 1 - fly into Seattle, drive and stay at Mt. Ranier, Paradise,
Day 2 - sightsee, sleep at Paradise,
Day 3 - drive past Mt. St. Helens, sleep Portland area,
Day 4 - Columbia River Gorge and Mt. Hood loop, sleep at same Portland place,
Day 5 - drive to Canon Beach, maybe Tillamook, then head north to WA.
Where to sleep nights 5, 6, 7 and how to get some of Olympic Nat. Park with a flight home out of Seattle on Day 8, 1pm.
Hotel suggestions welcome, we are Comfort Inn/Holiday Inn/Best Western people, but I would love any suggestions.

I don't know if you want to go back to Paradise for a second night. See all you want to see of Mt. Rainier and come out the south entrance and stay in Packwood the second night.
From Packwood go west to Randle and turn south on the FS paved road that goes east of Mt. St. Helens. Take the spur road over to the Windy Ridge Viewpoint. From there go south all the way to Carson on WA 14 (all paved). Go east on 14 to Bingen and cross the river to Hood River OR. http://www.hoodriverinn.com/
The next day make the Mt. Hood Loop ending up at Cannon Beach.
Cross the big bridge (US 101) in Astoria to get back to coastal Washington.

I still need help with the Olympic National Park route on days 5,6,7, and what towns to stay overnights. We like an occasional 2 nights at one location if possible.
Even with maps, books, and google - you are a great help!
The trouble with Olympic NP is that there are no "through" roads. You will have to choose which roads you want to enter the park on and double back on. Among your choices after you go over the bridge at Astoria are Quinault, Forks (Twilight) and Port Angeles. If you had your passport you could take the ferry over to Victoria BC from Port Angeles.
After your night at the Hood River Inn you might want to double back for a second night after driving all the way around Mt. Hood.
Try to get a good sunset picture with Haystack Rock in Cannon Beach.
