Car Rental:
Fox Rent A Car (Atak Car Rental). Located just outside of the airport terminal they will meet you as you exit customs with a name sign and a smile. For my rental, about US$60 cheaper than most companies at the airport. They also give you a discount card for purchasing fuel at “N1” gas stations, saves a few kronas per liter.
Horseback Riding:
Is Hestar Riding Stables, about 20 minutes outsides of Reykjavik. Bring your AAA card and save 15%. Nice trails with gorgeous views. In season, you can also pick, for free, wild blueberries after your ride!

I think if you have just one week then Easter Island. For NZ, I would go when you have time to visit both islands.
Do Zambia and Namibia. Both are so easy to visit if you use JNB as your base. About US$300 to fly to Livingstone to see Victoria Falls and you can walk over the bridge to Zimbabwe for lunch. Also easy day trips from there to Botswana and Chobe National Park.
Haven't been to Easter Island or Namibia but will probably go back to SA in December or March 2013.
