Travelzoo.com for ideas of what is available as last minute packages, last minute airfare, hotels, even cruises, etc.
Cheap Caribbean for the islands
For last minute cruises, I like vacationstogo.com. I have booked several through them.
They also offer a variety of vacation packages, but I have not booked any of those.

Yes, definitely sign up for travezoo. You get a weekly alert for the week's 'top 20 special deals' and additional e-mails for special offers.
In maybe 4 or 5 years on travelzoo I've only actually booked one of their offers twice -- once a great Manhattan hotel deal that saved me about $150 a night, and another stay at a very special Big Sur destination resort that saved me more than $400 a night (this one was a bucket list property that I assumed I'd never be able to afford!)
