a month-long vacation with two small kids

My husband has a 4 week paid sabbatical coming up the year after next (we're planners!) and the world is our oyster...or something like that.

By then our two girls will be 5 and 3. How would you spend the time? How do I even narrow down the options??

- We've seen a LOT of Europe (although I've not been to Italy - gasp!), definitely want to go abroad, Africa and Asia are not high on the list with small children
- We have frequent flier miles out the wazoo on Delta so most locations are within reach

For examples, I've thrown out the idea of renting a house on a small island off the coast of Honduras for the whole month. This sounds super relaxing to me. Husband not such a fan as he'd "get bored".

Another idea was to stay on the Italian coast or countryside and make little trips throughout the country/region here and there throughout our stay.

Or...two weeks in Ireland and Scotland (been to both but love them) and then exploring Scandinavia (never been).

Any and all thoughts and ideas would be hugely appreciated to get our wheels turning on how to take advantage of this time!
