From Rio, get a flight into IGU. Check schedules on LATAM (TAM) and GOL. Fly in as early as possible on day 1 and out as late as possible on day 3.
If you are flying in and out of IGU, stay on the Brazilian side. There are plenty of hotels at most all price points in the town of Foz do Iguacu, on the road from the town to the park entrance (more resort-like hotels) and including the expensive Belmond Cataratas in the park itself.
It is quite easy to get around by local public bus or by taxi to both sides of the park. Crossing the border takes about 45 minutes.
The Brazilian side takes about 3 hours to walk the path and take photos. The Bird Park is near the entrance to the park, and is a must see, taking another couple of hours.
You can take a boat ride under the falls from either side.
You can probably spend an entire day on the Argentine side. There is a place to take a refreshing (and safe) dip, so maybe bring a bathing suit. Watch out for the coatis; they love to try to steal your food/drinks. LOL
