Please help plan 2 weeks beach or lake getaway

Hello and thanks for any help you can offer. We are leaving Jan and are spending three months in South America and the month of March will be in Ecuador. We are spending 5 nights doing an amazon adventure and will spend time in Quito but would like to spend some time in one spot fo ten days to two weeks in a cabin or apartment at a beach or lake.

We both love swimming, like warm weather but don't do well with oppressive heat or humidity
We are 60 ish. And don't want a party atmosphere

I know that there are no guarantees but hoping for an area that the chance of continuos rain for the two weeks is not likely. I know it rains a short time this time of year but we just spent 2 1/2 weeks in Croatia with down pours almost every day and it was not fun.

A place where we could do day trips from would be great

I have done some reading but still confused. Thanks very much
