Hello.
I will have almost four hours from arrival at EZE to my connecting flight out of AEP on a Saturday in November. Is this enough time to clear customs with only carry-on luggage, take a taxi, and make it on-time to AEP with check-in?

It should be OK, obviously IF the plane is on time. Will this be in the early morning, which is the time most flights from the US arrive?
Make sure to avoid Global Exchange and take only transportation which can be pre-paid in an official-looking booth.
http://www.taxiezeiza.com.ar/eng/ is the cheapest, but I believe they don't take credit cards.
