I will be spending couple of day early December in Rio for business. I have 2 days free before my meetings and 2 days after.
I am planning to spend 3 days to visit Rio. So, I will have an extra day.

You could take the bus to Petropolis.

You could take the ferry to Niteroi for the views, see the museum (http://en.wikipedia.org/wiki/Niter%c3%b3i_Contemporary_Art_Museum), have lunch at the fish market, and/or go to the beach (http://wikitravel.org/en/Niter%C3%B3i)
Note: go to the Cristo statue in the first sunny hours you get in Rio, even if you have previous plans; hardto tell when you will have sun again at that time of year.
Yes, Petropolis is probably the best idea. You could also go to Paraty, but that is a bit far for a day.
Paraty is 4.5 hours by bus one way, indeed a little far for a day trip for all but the most hardy.
