Cash vs. Eftpos/credit card

Hello all! Not too long until our big trip now, 32 days until we spend 32 days in South America! :)

Just a little question. I've booked all our accommodation for the trip online choosing to pay later (when we check in) and so our rooms are reserved.

Do most places prefer cash or Eftpos/credit card? Is there a large fee to use card? And if we pay in cash, is a discount offered to us?

Just trying to decide how much cash we should have on us, or if we should mainly keep everything Eftpos related.
