Trip suggestions

We are planning a trip July 12-19. Flying into San Jose mid afternoon, want to take a bus to Monteverde area, then head to beach. We like less touristy things, hiking, snorkeling, less crowded areas. Would welcome suggestions/ideas on trip. Which coat Caribbean or Pacific? It will be myself, husband and 17 year old daughter. She want to see cloud/rainforest, volcano. coffee plantation and snorkel or fish. Plan to get around by walking and public bus. Any suggestions of itinerary of places to stay would be much appreciated!
