Returning to C. America in June/July...where to now?

My boyfriend and I have already explored Costa Rica, Belize and some of Mexico. We have received great advice from this website in our endeavors. We are now looking to perhaps Guatemala or Panama? We want to be somewhere very quiet and non-'resort-y,' but also close to restaurants and fun places. We also want to be on the beach, in the warm sun, and hope to travel to a rain forest. We love to snorkel and adventure, eat lots of good food, and relax where it is quiet and pristine (and where there are not a lot of kids or spring break youngins)...I know, I know, I sound like a Scrooge! Just trying to be thorough. If anyone has suggestions, we are all ears! Thanks for the help over the years...
