Nicaragua- advice for 1 week trip

Nicaragua- advice for 1 week trip
Hi,
My boyfriend and I are going to Nicaragua very soon for one week, and we were hoping for some advice. We haven't made advanced reservations yet anywhere, though are open to do that if it's required/ helpful, especially if anyone has specific hotel recommendations. We fly in to Managua at 1pm Sat the 21st, and fly out at 9pm the 29th, giving us 8 nights in the country. Based on readings so far, I'm thinking of the following destinations:
-Granada (travel there from Managua upon arrival) for 3 nights, using it as a base for day trips
-Omotope- 1 night
-SJDS - 1 or 2 nights
-Corn Islands (maybe?) - 2 nights
Any recommendations are appreciated. Do I have the best places listed here? Are there other places we should go (given the short period of time)? What sites are most-sees for 7 days? Is going to Corn Islands even feasible for such a short time or will this be too much of a rush? Also, would it make sense for us to rent a car or is public transportation a better bet (neither of us drives stick)? Should we reserve hotels in advance for any of our destinations?
We're in our mid-20s, will be traveling with packs but looking for comfortable (inexpensive but not dorm style hostels) accomodations. We don't surf (yet, anyway) but like outdoorsy stuff. All cultural experiences welcome!

I love love love Granada! We stayed at the Hotel Terrasol, which I'd highly recommend. Victor and Katja (the owners) really take care of you. It's comfortable, well located, inexpensive. We would wake up to the horses clippity-clapping on the cobblestone street outside our window.

Casa San Francisco in Granada is very nice and very reasonable pricewise. Close to the main square but 2 blocks away for the quiet. They can also arrange transfers for you and there is a tour company right next door to them.

We are tossing around the idea of going to some of these same locations. Sounds like getting to Ometepe and Corn Islands is a little bit of an adventure. We are wondering about the day trip to Ometepe to look around. Heard anything about the day trip? Corn Islands should be a good trip this time of year. We travel in the fall so we would probably experience too much rain but I hear really good things and it sounds like they would be a good fit for you two.
We also want to experience SJDS. We enjoy walking between the small beach bars/restaurants in the evenings, trying different types of seafood and talking with bartenders and other travelers about what we would enjoy doing/seeing. There's a lot to be said for waiting until you get there to make firm plans.
I think Granada would be hard to pass up. Everyone seems to report good experiences.

Too much for 1 week!
I'd suggest 2 nights SJDS, 2 nights Granada, 2 nights Ometepe!
or
3 nights Corn Islands, 1 night Ometepe, 2 night Granada
