Everything you are looking for is available your travel agent can arrange everything in advance or you can book these activities at your hotel. The hotel you are asking about is that the Premier Hotel it is in a good location walking distance to town try trip advisor.com there are a lot of reviews there.

I am going to PV for the first time in April. I have found EVERYTHING I could possibly need to know at www.puertovallarta.net
It is a great site. The bulletin boards and trip reports tell you everything you can think of first hand from visitors to PV. You can use the search option to find what you are looking for. Also, www.tripadvisor.com is the best site to find reviews on that hotel. Have fun and write a trip report when you get back for others looking for first hand info! Hope this helps!

Be sure to take in downtown - El Centro. Visit the Cathedral, choose an evening to stroll along The Malecon. Shopping, galleries, restaurants, etc. are all there. As for clubs there's plenty in downtown and the southside. Get a map, and venture 'south of the river'.
