Looking for Belize itinerary planning suggestions

After wanting to go to Belize for a few years now, we are finally going at the beginning of February! We're thinking of splitting our time with 4 nights in the Cayo District and 4 nights on Caye Caulker. For the inland portion, we want to go to Tikal (I think just a day trip will be enough for us), my 17 year old and my husband want to do the ATM cave while my 11 year old and I do something else (Barton Creek?), we all want to go to the Mountain Pine Ridge, and also cave tube and horseback ride.

Does the Mountain Pine Ridge include the Rio pools? Can you ride horse to the Mountain Pine Ridge? My husband also looked at Barton Creek and thought that looked fun, but wouldn't that be similar to ATM?

Are all of these things doable in 3 1/2 days? I'm thinking we could do something on our transfer day (the cave tubing?).

We thought about doing a 5/3 split, but we really love to have ocean/island time so I'm not sure 2 full days would be enough on Caye Caulker.

Lots of questions, I know. I appreciate any input.
