Has anyone been to this hotel? Is the area safe? How far is this from the Liberia airport? Are there outside restaurants or are you somewhat confined to the Marriott? Is English one of the primary languages here? Please advise.

It's a gorgeous hotel w/ a gorgeous setting. It's about an hour and 15 minutes from the Liberia airport by car.
At the hotel, you're pretty much bound to the restaurants there. I think they run a shuttle to a beach club and restaurant inside the Hacienda Pinilla complex.
You could take a taxi to nearby Tamarindo, or the lovely beach restaurant Lola's (worth it).
Inside the hotel is very safe. Outside, in Tamarindo, etc, traditional traveling abroad in Costa Rica precautions apply.

How far is Tamarindo from the hotel? What's the cab fare there? I have a rental car but it may be easier taking a cab.

It's about 15-20 minutes to Tamarindo. Most of it on a dusty, somewhat bumpy, but relatively well-graded road. I'm not exactly sure what a taxi would charge, probably around $15. The JW may have regular shuttles into town, and I'm pretty sure they do have them to Lola's.
If you have a sense of adventure, do it in your rental car. But do it first in the daytime and be sure to get your bearings. The roads around there aren't very well marked. It's easy to get lost just inside the whole Hacienda Pinilla area, which houses the JW.
