Hi all,
we're debating Mexico or Caribbean. If in Mexico, (prefer the gulf side) we would like some surfing (if possible??), diving, 'jungle/rainforest' for really good birding, no heavy tourism, quaint town, spectacular landscapes, lots of exploration areas, and nearby towns that are interesting.
Right now we're looking at Tulum/Akumal to meet some of these, but does anyone have other fantastic places they have been that meet a lot of this wish list?

There is no surfing near Tulum/Akumal - there is kiteboarding though. Surfing is best on the Pacific side. Otherwise, the Carribean oast of Mexico has all that you seek - diving at the reef, jungle - look at Punta Laguna, birding in Sian Kaan, town - pueblo of Tulum although it is a working town fo rthe most part, landscapes are the many Mayan ruins, exploration other than what I've already listed can be the many cenotes, interesting town to visit - Valladolid.
If you're looking at Akumal and Tulum, I assume you've looked at Puerto Morelos, but if not, check it out. We're headed there in March for a week -- seems like it *might* fit a lot of your requirements.
Sayulita (north of Puerto Vallarta) has surfing
Other than that yes Akumal and Tulum sound like a pretty good fit.
You could also take a look at Negril Jamaica. I was there 10 days just last summer (and have been twice before) it's not exactly what you describe, but it's pretty fantastic.
