You lucky duck! When members of our family stay with host families and also when we host students and visitors from other countries, we find gifts that represent where you are from to be the best. Some examples might be a local candy or dried fruit treat, postcards or a small book of pictures or a calendar, coffee mugs with your town or state on them, or a craft item that's special to your part of the world.

Have a wonderful trip!

What a Wonderful opportunity!!
I've given gifts also that represent where you are from. I'm from PA so a book on PA is great....Picture Book. I've also given maple syrup as we have a lot of maple farms. That is always fun to teach about maple products and how it is eaten. Once pancakes were made and we had a feast. This may interest the couple you'll be with because they seem to like the outdoors with their gardening.
Postcards are great!! You could even take photos of your life here, family members, pets, etc...and give that as a gift to share who you are because they share who they are.

Cute flower pot. Buy a terracotta pot and paint a flower on it yourself; Fill it with seed packs ? I think you could take these into the country.

You cannot take seed packets into Costa Rica, but the flower pot idea is cute.

I've brought lotions and candles for the women, T-shirts for men, toys and books for kids.
