Help with best all inclusive resort with swim up room or spa?

My husband and I are considering going here in March or April (which is best and cheapest)? Hoping for a really WOW factor swim up room or a room with spa - we saw a spa room at Excellence Playa Mujeres (I think) and it looked amazing.
Things I need help with is best place for first timers? We have only travelled to Mexico on a cruise and not a great feel for it. Want to be somewhere there is plenty to do even outside the resort like snorkel, jet ski, sunset sail, etc. We thought maybe somewhere outside of Cancun might be good? Not sure so open to expert ideas!
