Help choosing AI resort...

Looking to book 10th anniversary trip. We've never been to mexico - flying in from NYC area. My head is spinning with all the research and reading I'm doing! Here are some ideas of what we're looking for in our vacation....
Adults Only all inclusive, nice beach preferably with comfy beds or chairs, bar/food service on the beach is a plus, nice big pool area also with comfy beds or chairs - bar service as well and or swim up bar. Prefer to have a big pool area with floats to be able to relax. Mostly looking for a relaxing by the beach/pool type of vacation with good food during the day and yummy drinks by the beach or pool. We are into more modern decor. Looking for good food and wine at night and some night life - it's just my husband and I and while we're looking for a nice romantic get away without the kids we also would like there to be some sort of night life and not the type of resort where everyone retires to bed super early...
