We just returned from Cancun a few weeks ago and had a few dinners at places that I believe would qualify.
Gustavo's at the JW Marriott. High end Italian in a very nicely decorated room. The food presentation and quality were both top-notch.
La Madera (sp?) An Argentinian style steak house that definately caters to a more affluent crowd. Reservations essential. Can be a bit boisterous and definately isn't a demur, white-glove type place. Nevertheless, it is definately a spot for those seeking a very good meal, where price isn't the main concern.
Maria Bonita - While I'd say it doesn't truely qualify as a fine dining, relative to the other establishments that specialize in Mexican cuisine, this would definately be at the high end. A nice location at the very end of Punta Cancun and a 9+ piece Mariachi band that plays just some fantastic music, with an overtone of classicial music thrown in. They make some fantastic dishes that would certainly appeal to those who like gourmet dining. I really enjoyed the Stuffed Quail in a Red Rose sauce.

Try the Blue Bayou a the Hyatt Cancun Caribe. We enjoyed our meals there. They even had a waiter who did a caricature of my husband in his soup. We also liked Maria Bonita. They had a marimba player the night we went there.

La Habichuela is great! Atmosphere and food is wonderful. I also liked Maria Bonita, the staff was very entertaining. Ate at Blue Bayou also, it was good, too. I would rank Habichuela the best by far though.

Our favorite by far is the Laguna Grill. It is a dining experience far above the rest of the restaurants in Cancun and with the most romantic sunsets and a bar/lounge to die for.
We have not found anything quite like it anywhere in or around Cancun and we have been coming down for years. Food is always spectacular and so is the service. It is a true gastronomic experience which should not be missed if you are any where near Cancun.
