            I'm confused about this recipe, please help

            The thread got me thinking about various different foods I've had with local beers when travelling. One food was nam in Thailand, I looked up some information online and found many contradictions.             Craving nam, I went to an Asian grocery store and bought a package of seasoning. The recipe is as follows:-

            1 Chop 1/2 kg lean pork sirloin while it is fresh and cold.
            2 Cut 1/4 kg pork rind into small long strips, add to pork mixture
            3 Add contents of this package to mixture.
            4 Add fresh chilis and garlic to taste
            5 knead until mixture becomes sticky.
            6 pack tightly into plastic containers and seal off. Serve at room temperature, keeps for one week.

            There is no mention of cooking the pork mixture in the recipe. Can fodorites please comment, I'm confused, is this to be eaten raw?
