Our daughter's boyfriend will be spending Christmas with us. He doesn't eat eggs. So I'm looking for good cookie recipes that don't call for them. I found a shortbread cookie recipe that sounds good, just butter, brown sugar and flour. Would love to have some "tried & true" ones from Fodorites.

I've got 4 tried and true eggless cookie recipes. I'd be happy to post any of the recipes if you think you'd be interested.
No-Bake Cookies (you may remember these from waaaay back. My mother seemed to always have them in the refrigerator. Main ingredients are peanut butter, cocoa, oats, and of course sugar. No baking, no eggs.)
Melt-Aways (always on our holiday cookie list. Butter, sugar, flour, nuts, and milk chocolate.)
Peanut Blossoms (sweetened condensed ilk, peanut butter, biscuit mix, chocolate kisses)
Crisp Molasses Cookies (made with, well, with molasses, lol!)

Look for a food allergy cookbook at your local library. I am a member of an organization called FAAN (food allergy & awareness network?)& they send out a newsletter with recipes but I don't usually save them.

CAPH -you call me whatever you want! (It is kind of weird having a new name but I was ready for a change.) But it's the same old me, good or bad, lol!
Okay, here's the recipes:
Peanut Blossoms
1 (14 oz.) can sweetened condensed milk
3/4 C. creamy peanut butter
1 tsp. vanilla
2 C. Pioneer Buttermilk Biscuit & Baking Mix
1/3 C. sugar
1 (9 oz.) pkg. milk chocolate kisses
Stir toether sweetened condensed milk, peanut butter, and vanilla, stirring until smooth. Add biscuit mix, stirring well.
Shape dough into 1-inch balls; roll in sugar, and place on ungreased baking sheets. Make an indententation in center of each ball with thumb.
Bake 375 for 8-10 minutes or until lightly browned. Remove cookies from oven, and press a chocolate kiss in center of each cookie. Transfer to wire racks to cool completely.
Crisp Molasses Cookies
1 C. molasses
1/2 C. Crisco shortening
2 1/4 C. sifted flour
1 tsp. salt
1 3/4 tsp. baking powder
1 1/2 tsp. ginger
Beat molasses and shortening until blended. Sift together and stir in remaining ingredients.
Let dough stand at room temperature 20-30 minutes. Roll thin (1/16") on lightly floured board. Cut with floured cookie cutters. Place on greased baking sheet. Bake 7 minutes at 350 (sprinkle with sugar before baking for a cracked look).
Melt Aways
1 C. soft butter
1 1/4 C. powdered sugar
1 tsp. vanilla
1 C. sifted flour
2 T. cornstarch
1/4 tsp. salt
1 lg. bar (9 3/4 oz.) milk chocolate, melted
Cream butter; gradually beat in sugar and vanilla. Sift flour, cornstarch and salt; add to butter mixture. Fold in nuts and chocolate. Shape into balls, using 1 tsp. dough for each cookie. Put on unbuttered cookie sheets, allowing room for spreading. Bake in very slow oven (250) for 40 minutes. (They don't spread that much, only to about the size of a 50-cent piece.)
All these receipes have been in my family for years. I hope you find one that works for your daughter's boyfriend. Christmas just has to have cookies! Good for you for thinking of him.

Thanks so much for typing those out for me! They look great! I love peanut blossoms but my recipe is a little different and calls for egg. So I'm really glad to have that one. I'm assuming Bisquick will work? I think that's the only brand I can get here.

Debi, that rice krispie site is so neat, so many good ideas for decorating. I just printed out the "hand" turkey. That is just too cute. I think I'll make some for Thanksgiving.

These are tried & true:
WALL STREET KISSES (about 36)
2 sticks (1/2 lb) unsalted butter, softened
1/2 cup confections' sugar + more for dusting
1 tsp vanilla
2 cups flour
1 cup finely chopped walnuts
6 oz pkg milk chocolate kisses
Preheat oven to 375°. Cream the butter, conf. sugar & vanilla in a bowl with a mixer until light & fluffy. Add the flour & walnuts. Beat at low speed until combined. Shape a small amount of the dough around each chocolate kiss, forming a sphere. Place on an ungreased cookie sheet. Bake 12 minutes or until the cookies are set but not brown. Roll the warm cookies in additional conf. sugar. Cool on a wire rack.
MELTING MOMENTS (about 5 dozen)
Cookies:
2 sticks butter, softened
1/3 cup confectioners' sugar
2/3 cup cornstarch
1 cup flour
Frosting:
4 TBL butter, softened
2 cups confectioners' sugar
2 TBL lemon juice
Grated zest of 1 lemon
Cookies: Preheat oven to 325°. Cream the butter & sugar together until light. whisk together the cornstarch & flour; add to the butter mixture & blend thoroughly. Drop by teaspoonfuls onto ungreased cookie sheets & bake 15-20 minutes. Cool & frost.
Frosting: Cream the butter. Beat in the sugar alternately with the lemon juice & zest, beginning & ending with sugar.~~
IMPERIAL COOKIES
2 sticks unsalted butter, softened
3/4 cup sugar
1/2 tsp baking soda
1/2 tsp vinegar
1/2 tsp vanilla
1 1/2 cups flour
1/2 cup chopped nuts
Preheat oven to 300°. Beat together the butter, sugar, soda, vinegar & vanilla with a mixer on high speed for 15 minutes. Fold in the flour 7 nuts. Drop the dough by the teaspoonful onto ungreased cookie sheets & bake 20-25 minutes.
Mexican Wedding Cakes (with pecans) comes to mind. I found a great version that uncludes Nutella.

I did a little digging through my recipes last night and found one that I've made several times over the years. I'll post it in case anyone else is looking for cookies without eggs.
Almond Butterscotch Bars
1 C softened butter
3/4 C firmly packed light brown sugar
1 t vanilla
1/2 t almond extract
1/2 t salt
2 C flour
1 C butterscotch morsels
1 C blanched slivered almonds
Cream butter and sugar. Beat in vanilla and almond extracts and salt. Gradually beat in flour until well blended. Press mixture into an ungreased 10 1/2x15 1/2x1 inch jelly roll pan. Sprinkle butterscotch morsels and almonds over cookie mixture; press lightly. Bake at 350 degrees until golden brown, about 20 to 25 minutes. Cool on wire rack. Cut into 2" squares.
Makes 35 bars.

Hi all. I did not forget your request - just been crazy busy. Here's the Nutella cookie recipe:
Mexican Wedding Cookies
3/4 cup (1 1/2 sticks) unsalted butter, room temperature
1/4 cup granulated sugar
1/2 cup Nutella
2 1/4 cups all-purpose flour
1 cup toasted pecans, finely ground (see instructions)
1 cup confectioners sugar
Preheat oven to 350°F. In large bowl, using electric mixer on high speed, beat butter and sugar until almost white in color (about 3 to 4 minutes). Add Nutella and mix on low speed to incorporate. Stir in flour and pecans, mixing just to blend. (Do not over mix.) Take 1 tablespoon dough and roll in hands, forming a small football-like shape. Place on ungreased cookie sheet. Repeat with rest of dough, spreading each dough shape at least 1 inch apart. Bake for 15 to 18 minutes. Remove from oven and let cookies cool for about 5 minutes. Put confectioners sugar in baking pan or large plate. While cookies are still warm, roll in sugar. (Sugar will begin to melt slightly and form sweet coating.) Place cookies on wire rack to finish cooling. Once completely cooled, store in airtight container for up to 1 week.

Another slant on the rice krispie cookies is to use 1/3 fruity pebbles and 2/3 plain rice krispies. You get a sort of jewel effect. Too much fruity pebbles and the flavor is too overpowering.
