Zurich to Flanders

I am joining my partner in Zurich after a conference. We'll then have 9 nights days in Europe (8 full days), starting in Zurich and flying out of Brussels. We're mid 30's, like historic cities, nice landscapes, wine/beer tourism, stunning castles, biking/hiking. We're absolutely set on Bruges/Ghent at the end of the trip (hence flying out of Brussels), but I'm still working out the route in between. I'd like some combination of Colmar/Alsatian wine route, Black Forest, Heidelberg, Romantic Rhine, and/or the Trappist Breweries in Wallonia, but I'm having a tough time working out a great itinerary. I'm dizzy with all the possibilities. I'd appreciate any thoughts narrowing it down!
