Wonderful Hole-in-the-Wall Provencal Restaurants? Recommendaitons Needed

We are looking for your best and most treasured recommendations for wonderful hole-in-the wall Provencal restaurants between Avignon, Aix, Cassis, Bandol, Les Baux, Grasse, Vence, Mougins, Lavendou, etc. We don't have a firm itinerary and may alter our plans for a great dining opportunity.

We're budget travelers in our late 40s looking for wonderful local cuisine in and around the small Provencal towns and vineyards. Menus on chalkboards are a plus, outdoor dining is a plus, the smaller the better.
