Wildwatching in Tuscany

Hi, brand new on Fodor's and I would like to have some suggestions about a "wildlife saphari" in Italy ( no shooting of course!).
I am interested in wildwatching and I would like to experience a deep immersion in nature. I have been told that in Tuscany in Mugello area it's possible to observe animals in their natural habitat. Do you have any suggestions about it? Should I stay in Florence and then move with day trips to Mugello? Thanks!
