Unless you have unlimited time you are asking the question backwards. How many days do you have for the trip - not counting the arrival or departure days.

IMHO the minimum you would need is:

Prague 4 nights
Vienna 3.5 days (4 nights including transit from Prague)
Salzburg 1.5 days - or 2.5 days if you want to see countryside (2 or 3 night including transit time from Vienna)
South of France (anywhere from 5 days up - 4.5 days plus a half day transit from Salzburg

So this is 16 days plus arrival and departure days - and you could easily spend twice as long in the south of France depending on what you want to see and do

Is there one city or country that you have always dreamed about seeing?

How much time do you have?

What are your interests? Museums, natural beauty, castles, villages and countryside, cities and cafes, places of historical interest? Do you enjoy hiking, biking, walking, sitting at cafes, taking tours, archeological ruins?

You asked which countries, but except for Provence, mentioned only cities. Did you want to just hit a few major cities or do you want to visit close by things of interest?

Do you just want to hit a few things on a tick the box list, or explore more in-depth?

You can take a train or fly between cities.
You could base in a city and take day trips.
You could explore one country or one area of a country.

A lot of people hav etime limits on their travel, but I would also suggest 4 in each place (Prague, Vienna, S France) except 2 in Salzburg. If you can do more, add on to southern France as you said yo uwanted to visit Provence in general, Nice and the Riviera. So that would be at least a week, ideally.
