Where to stay near Madrid?

Hi, im planning on a holiday in Spain with my dog looking to arrive in either Santander/Bilbao by ferry. I have a week booked in the Alicante area followed by 4 nights in Santander before returning to England. I am in need of some recommendations of where to stay enroute to Alicante for 2 nights and I was thinking of somewhere near Madrid as that would be about half way. As I will be travelling with my dog I am not keen on staying in the centre of Madrid or any large town. I would prefer somewhere in the countryside that is quaint but not too quiet that there isnt a small supermarket/bakery/cafe.

Any ideas?
