Where to stay in Italy for a month in Oct/Nov

Hi, my husband and I are hoping to spend a month in Italy in Oct/Nov and wondered where's best to stay for reasonable weather at that time of year, and transport links (pref a bustling village or market town with a train station) so that we can daytrip or overnight trip to major places of interest.
Would also like to have the opportunity to take a language, cookery or art course while we're there, so a very tall order!
Any suggestions or tips would be very much appreciated.
