Where to Stay in Copenhagen? Nyhavn or closer to Trivoli area?

We are traveling in summer for 2 nights to Copenhagen and we found a few hotels in Nyhavn we liked (adimiral, scandic front, bethlehem) but someone told us this was not best location as it is way too touristy and not central. We are early 30 couple who like nice areas that are either quaint or funky/artsy.

Should we stay in another area?

Things we want to do in our 3 days 2 night trip. hang out by nyhavn restaurants/bars, go to trivoli for 2 hours we are not amusment park people but heard its must see at night, go to shopping areas and stroget and any other suggested cute ares, see the castle, take a canal tour, and visit other areas that are spunky with cool hip restaurants/bars not sure where to do this. Go to Christiania for brief stroll.

Any suggestions on location that is best? And where to get a hotel?
