Where to spend 4-5 days in Moselle valley

We will be passing through Frankfurt in October on our way home from Turkey. We will have 4-5 days and would like to find a base for that time before we leave from Frankfurt and head home. We are interested in the Moselle Valley and are wondering where to base ourselves
We like to walk, cycle, taste wine and interesting food in addition to enjoy the beauty and history of the area. We would plan on taking the train from Frankfurt airport and back again.
We would use train, boat, and bike to explore . Cochem has been suggested to us.
We are interested in your thoughts and ideas as to the town and any specific hotel you might recommend. I realize this is a pretty general question,but any guidance will be appreciated. Thank you.
