Where in Southern France

Our daughter and husband are planning a trip to Europe in May, a 25th wedding anniversary gift. They seem interested in southern France. Both speak the language though likely not with a correct accent. Anyway, a question: what has impressed any Fodorites familiar with that region? Any travel tips and does terrorist scares change anything?

We are all sporting a beard for the men and the women are wearing a Niqhab.
Wine is used for irrigation.
Donkeys are being slaughtered - no more saucisson !
What else to do ?

Cross fingers but it is unlikely that terrorists would target provincial cities.
South East and South West are very different, from Riveria (Nice, Monte Carlo) to Pays Basque, through Provence, Cathare country and Pyrennees). What would they prefer ?
And for the accent, no worries. Even French from other provinces bearly understand these guys, especially in Provence

If excitement is not a criterion, how about just settling in Aigues Mortes for a few days?

Now, now, Kerouac, we loved our stay in Aigues Mortes, so much that we extended it. We were seeking peace and quiet, exactly what we got. LOL! Actually, the surrounding area is interesting with swampy water and beautiful birds - handsome Cowboys and gorgeous cowgirls too.

What we liked about Provence.
Food!
Best pastries and breads I have ever tasted. Also enjoyed how the cuisines of other countries have contributed to a great variety there. Tajines were wonderful, flans addictive, roast chicken and potatoes better than anywhere else.

Beautiful town centers - squares filled with cafes, surrounded by buildings with beautiful, flower draped windows. Fountains. Wide boulevards lined with huge trees and cafes.

Artists
Ancient Roman architecture - aqueducts, colosseums
History
Markets
Many Medieval villages
Flowers
Wine

I like the southwest myself. No cowboys or cowgirls, just sheepherders, good food and excellent wines.

It would help to know what their interests are - why do they like southern France. Upscale seaside resorts with a casino? Charming villages high in the mountains behind the coast? Roman ruins? Large cities? Biking in countryside? Small, unique museums?

And how many weeks do they have for this trip?
