It depends on your interests. If antiquities, Ephesus might be the place to visit.
With 12 days, Istanbul, Cappadocia region, and Ephesus(vicinty) can be a workable itinerary, flying between destinations... Are you including travel time to and from Turkey?
It is a bit hard to imagine why you are going if you don't know what you want to do, but . . . .
It will be way to cool for the beach or boating. So:
Turkey is famous for Roman ruins. Google.
Turkey is famous for Christian sites. You can follow in the steps of St Paul. Google
Cappadocia is full of interesting Christian ruins in caves.

Are you into different cultures? My wife took the bus from Bursa to Ankara and it was a trip in many senses.
What you should not plan to do is dope. Watch the 1970's movie "Midnight Express" before you go. Turkish prisons may be better but their laws are still strict.
