I just took a weekend trip from London to Amsterdam. I had a great time exploring some off-the-beaten-path destinations as well as some great restaurants.
I stayed with a friend that lives there, and she took me to some excellent markets, including Noordermarkt. It has great food, including freshly made stroopwaffles.
We also visited the new Amsterdam Public Library, which is amazing. The cafe on the 7th floor is a great place to get tea or a light meal, and there are great views over the city.
The restaurants we went to were all excellent. They included Puccini, Tempo Doeloe, and Pancakes!.

The only thing I wouldn't recommend is taking a bus from Brussels to Amsterdam. There were big delays and the ride itself wasn't very pleasant.
