Although Athens is considerably further north than southern California, I think that you could dress as you would for Santa Barbara to San Diego.

The weather in Greece is very unpredictable at that time of year. It's possible for it to be nice, and it's possible for it to be cold, windy, and rainy. You need to be prepared for both kinds of weather. Layers are the way to go.

Just a side note going off season be sure you have pleanty of euros (cash ) lots of places will only take cash in the off season check first with the places they may advertise Credit cards but beware ! it happend a a few gas stations and at the hotel .`
