We are heading to Germany at the end of next week and will be staying for the whole month of May.

Just trying to consider what clothes to pack as we will be heading to warmer climates afterwards (Spain and Thailand) so don't want to put too many cold climate clothes in if they're not necessary as we'll be lugging it all around with two small chidden in tow.

Anyone there right now that could advise? (We'll starting in Hamburg and heading down toward Munich so covering most of the country climate wise).

weatherunderground and accuweather are your friends. The forecasts they give for Bavaria are accurate enough.

Check 1-2 days before you leave and also plan for rain (or plan to buy umbrellas should you need them).

And since you asked: right now in Franconia it is partly cloudy, very windy, and 22°C/71°F. And it might rain this weekend, or it might not.

Thanks sparkchaser, sounds like the German Spring is the same as the Australian Autumn, almost the exact weather we are experiencing right now

Actually, we are having an odd spring. It has been unusually warm and dry. The winter was really mild too which means if you have allergies, watch out.
