Check out the cheap airlines - easyjet, ryanair - from london you can easily, cheaply get all over europe - easyjet tends to use the main airports - ryanair uses small ones outside of the main cities so make sure you know exactly where you are flying into. It is also easy to get one way flights so you can travel to one country and return from another.
For better weather you may want to head south to Spain (barcelona), Southern France or to Italy. Many towns will be having their Christmas Markets at this time of year:

As you can tell from the posts on this forum, there are a huge number of places to go and things to see in Europe. It depends on how long you have and what you're interested in. And what time of year you travel.
You need to do some research. Read guidebooks, look at the many applicable WWW sites -- like Fodors Destinations (click in the far left of the orange stripe at the top of this page). Also there are travel programs on TV and DVD.
How many of you are there? What's your budget?

Read the trip reports for the countries you plan to visit. I found a lot of practical advice and tips that was not in guidebooks.
